Shamali (almond semolina cake)

For the New Year, we offer up this special dessert recipe from Stella Cohen, a passionate ambassador of Sephardic cuisine through her cookbook, Stella’s Sephardic Table, as well as her website, www.stellascookbook.com. Cohen, who was raised in Zimbabwe, is the great-granddaughter of Yaacov Capouya, the Rabbi of Rhodes in the early 20th century. Others in her family are from Marmaris in Turkey. And so her cooking is infused with all of these influences from the Jewish communities of the Ottoman Empire. This dessert seems to have its origins in the east Mediterranean. There are many similar desserts in Greece and Turkey, and it is a favorite of the Jews from Rhodes. INGREDIENTS For the syrup:
